Did the Founding Fathers address the rights of non citizens (particularly in regard to due process) in the original Constitution. I see no cases in the Supreme Court before 1903 that addresses this at all.

The original language of the Fourteenth Amendment referred only to citizens.  The change to "nor shall any State deprive any person of life, liberty, or property, without due process of law; nor deny to any person within its jurisdiction the equal protection of the laws" seems intentional.
